The potato omelette is a family-style dish in which the main ingredient is the egg. It’s found on tables in many countries around the world.While most people know how to make a potato omelette, the challenge is getting it just right.
Ingredients
1 kg Canchán potatoes
1 onion
1 bell pepper
8 eggs
Salt and pepper to taste
Preparation
Prepare the ingredients: Chop the onion and bell pepper.Boil the potatoes, let them cool, and cut them into slices or cubes as you prefer.
Sauté the vegetables: In a pan with a bit of hot oil, sauté the onion and bell pepper.Then add the potatoes and fry them lightly, without letting them brown.
Mix with the eggs: In a bowl, beat the eggs, season with salt and pepper, and add the potatoes, onion, and bell pepper. Mix well.
Cook the omelette: In a clean pan, add a few drops of oil and pour in the mixture.Cook over high heat at first, then reduce to medium.Once the bottom is golden, carefully flip the omelette and cook until it reaches your preferred texture—soft and moist, or firm and compact.
Serve: Serve on its own, with a bit of mayonnaise, or alongside a fresh salad.
